Coconut Popsicles




This heatwave is unbearable! That's why I've decided to make a new popsicle recipe!!! With coconut!!! Unlike the tropical fruit popsicles I made a while back, these new ones don't last as long before melting because they are so creamy. My son loves them, especially the little bits of coconut he finds as he eats them. We're now in the habit of always keeping a variety of popsicles in the fridge so we always have enough for the whole family on these scorching hot days. Hope you all enjoy them as much as my son does when he gobbles them up!

Ingredients:

1 can (13.5 onzas) of coconut milk
1 can (14 oz) of condensed milk
1 cup of coconut flakes
1 cup of heavy cream

Procedure:

  1. Put all the ingredients in a mixer. Mix well.
  2. Put all the mix in the popsicles mold.
  3. Freeze through the night.







Put the coconut flakes into the blender.





Add the coconut milk.





Add the heavy cream.





Add the sweetened condensed milk.





Mix well.





Continue mixing until smooth.





Pour mixture into the molds.





Enjoy!

Tropical Popsicles




I know... it's been a while since I last posted. I've been dancing around the idea of making you tube videos for some of the recipes. Tell me what you think! 

For now... I have an amazing two year old kid, who loves popsicles and everything that's cold. Since he was a baby he's been eating frozen fruits to help him with his teeth. These popsicles don't have added sugar; all the sugar is from the fresh fruit and the yogurt. There are so many combinations that I think my little guy is gonna be very happy for a while, eating his popsicles.

Ingredients:

1 cup of vanilla yogurt 
1 cup of mango
1 cup of pineapple (you could use the ones that come in 100% juice)
1 small banana
1 orange (the juice)


Procedure:

1) Cut the fruits.
2) Put the fruits in the blender.
3) Add the yogurt.
4) Add the orange juice.
5) Blend everything. 
6) Put the mixture in the popsicle molds. 
7) Freeze for at least 4- hours or overnight. 





Cut the pineapple.




 Cut the mango.





 Cut the banana.





Put the fruits in the blender.




Add the yogurt.




Add the orange juice.




Blend everything. 




Mix well.



Put the mixture in the popsicle molds. 




Freeze for at least 4- hours or overnight.

Monkey Bread



It's no secret that I just love to make sweets! Making them takes away my stress, it's therapy. There are a lot of ways you can make monkey bread. The original recipe I found didn't add the icing on top, but the reality is that I wouldn't eat it without it. It tastes amazing! I made this recipe for my hubby and brother. Even though my husband, brother and I gorged ourselves, there were plenty of leftovers! It tasted amazing the next day cold from the fridge with a cup of coffee.  I will be making this as a dessert for Thanksgiving dinner this year. I really hope you guys enjoy making this and eating it as much as we did! Until the next one!!




Ingredients:

3 (16 oz packages) of refrigerated biscuits
2 sticks of unsalted butter
3/4 cups of sugar
1/2 cup of brown sugar
2 tsp of cinnamon


Icing:

You can find the icing recipe here!

Procedure:




Grease the bundt pan.




Open the refrigerated biscuits.




Cut the biscuits into quarters.




Put the sugar in a bowl.




Add the cinnamon.




Mix the sugar and the cinnamon.




Add the biscuit quarters to the mixing bowl.
Cover with plastic wrap. 
Shake the hell out of it!




Once mixed, put the biscuits into the bundt pan.




Melt the butter and the brown sugar together.




Once melted and mixed, pour the butter mixture over the biscuits. 




Make sure to pour all of the butter/sugar mixture!




Add any sugar/cinnamon that's left in the mixing bowl over the top.




Bake at 350 degrees for 35 minutes.




Take it out of the oven.




Enjoy the marvelous smell of sugar and cinnamon that will invade your kitchen!




After 3 minutes put a plate over the monkey bread.




 Flip it over.




Enjoy the view. I know you are tempted to try it out, but don't! 
Just wait a little bit.




Put the icing in a pipping bag and drizzle it all over the monkey bread.




Now enjoy!




Seriously, enjoy!! It's amazing!!

Coconut Lime Popsicles!





An old girlfriend from high school shared this popsicles recipe on her Facebook account, so I decided to give it a try. I must admit I didn't love the taste since it has a very mild flavor, but my husband and our baby devoured these things! It's a super simple recipe to make. Since my pediatrician doesn't want our baby to consume cow's milk yet (hence no ice cream) it's a great alternative for my baby since the icy treat helps soothe his teething. He really enjoyed his popsicles a lot!

Ingredients:

1 can of coconut milk
2 limes
3-4 tablespoons of honey







Procedure:





Put milk in a bowl.




Zest the lemon.




Add the lemon juice.




Add the honey.




Mix everything well.




Continue mixing until smooth.




Put the mixture in a measuring cup. This makes it easy to portion as you pour.




Have your popsicles molds ready.




Pour in the mixture, then chill in the fridge for at least four hours.

Enjoy!
