Homemade Cheese Burgers




This recipe is easy and tasty! It's a go to recipe in my house. I prefer making burgers from scratch than buying them frozen. It really doesn't take that much time to make. You can even make them the night before and leave them in the fridge, or you can make them ahead of time and freeze them and you'll have fresh hamburgers for whenever you need them or when your family wants to eat something quick.  My hubby just loves them! This was the first time I made them for my toddler to taste. He loved them! Kept asking for more! 




Ingredients:

2 pounds of ground beef
3 Tablespoons of Steak Sauce
6 egg yolks
1/2 teaspoon of ground black pepper
1 teaspoon of salt
1 1/2 ounces of white onion
3 Tablespoons of cilantro
2 dashes of Worcestershire Sauce

Procedure:

  1. Mix all ingredients in a bowl.
  2. Let it rest for 10-15 minutes in  the fridge.
  3. Make patties.
  4. Cook them on the skillet.
  5. Put cheese on top and bake at 350 degrees until the cheese has melted. 
  6. Serve on top of a bun and enjoy!





Put the ground meat in a bowl.




Add the Steak Sauce.




Add the six egg yolks.




Add the ground black pepper.




Add the salt.




Add the chopped white onion.




Add the chopped cilantro.





Mix all the ingredients well.




Once mixed put the meat in the fridge for 15 minutes.




Line a cookie sheet with parchment paper.




Mold the patties.




Aren't they beautiful!




Cook the patties on a skillet or a grill skillet. 
Once cooked, put them on a new sheet of parchment paper.
Normally I use the grill skillet but today I used the regular skillet.




Put the cheese on top of the cooked patties.




Put the in a 350 degrees oven for 5-8 minutes.




Nothing better than a simple cheeseburger!

Carlota Lemon Pie




This week's recipe is a no bake pie known as Carlota Pie. It's really easy to make and pretty tasty! Normally the last layer is cream but I wanted to make it a little different and leave some cookies on top, making it easy to know where exactly to cut the pieces. Enjoy!!


Note: Please don't push down on the cookies, trust me. The first time I made it, it was not pretty...  just let them be, once you've placed them. I pressed down as I laid each cookie and all the cream that should be sandwiched between the cookies was pushed out. I ended up with a tightly packed block of cookies surrounded by cream. So remember to just place the cookies, don't press down!





Ingredients:

1 cream cheese
1 can of evaporated milk
1 can of condensed milk
1/2 cup of lemon juice



Procedure:

  1. Add the evaporated milk
  2. Add the cream cheese
  3. Add the condensed milk
  4. Add the lemon juice
  5. Blend it all in the mixer
  6. Start building the layers






Add the evaporated milk




Add the cream cheese




Add the condensed milk




Add the lemon juice.





Blend it all in the mixer




Start building the layers. First cream, then cookies.





Keep going until you're reached the desired height.

Rotisserie Style Crockpot Chicken





I love to eat rotisserie chicken.  So while browsing through the internet one day, I got very excited when I found an extremely easy recipe for it (which I adapted to suit the taste buds of our toddler). I must say that this recipe isn't just the easiest whole chicken recipe you'll ever make, it's also super delicious and the chicken falls right off the bone. However with that tenderness comes an unfortunate truth... if you are planning on taking the whole chicken and putting it on a plater to present it to friends and family (like I did) you won't be able to. The meat will be so tender and juicy it will instantly slide off the bones and fall to pieces when you try to grab it.  But trust me, it won't matter... that's how good this chicken recipe is! That's how you know it's perfect! This is a recipe I do at least once a month. I hope you guys love it as much as us. Enjoy!! Until the next one!




Ingredients:

1 young chicken
3 teaspoons of salt
1 teaspoon of sweet paprika
1 teaspoon of dried thyme
1 teaspoon of onion powder
1 teaspoon of ground black pepper
1 teaspoon of italian seasoning
1 lemon



Procedure:

  1. Spray your crockpot or slow cooker with non stick spray. (I used Pam)
  2. Combine all ingredients and rub them all over the chicken, inside and out. Or you can do it one by one like I did in the step by step pictures.
  3. Cut the lemon in half and put it inside the chicken.
  4. Place the chicken in the crockpot with the breast side down.
  5. Cook on high for five hours or on low for nine. I made mine in five hours.

Note:  Do not add any liquid! It's not necessary. The cooking process will make the chicken release its own juices keeping the meat tender. (This is why I like to put the breast down.) 





Put the chicken into a large mixing bowl.




Add the paprika.




Add the ground black pepper.




Add the dried thyme.




Add the onion powder and Italian seasoning. 

Rub everything all over the chicken, inside and out.




Cut the lemon and squeeze all the juice into the chicken.




Put the lemon inside the chicken as well.




Put the whole chicken in the crockpot. 




Cook on high for 5 hours




Final Result! Decadent and juicy chicken! Enjoy!!!

Pecan Pie




I've heard a lot about how good the pecan pie is. So this past Thanksgiving I decided to give it a try and make it! Let me tell you something, it is amazing! I used Ree Drummond's recipe. I didn't make the pie crust from scratch, because truthfully with my one year old asking for attention I didn't have the time. I used a 9' pie crust. You can use light or dark corn syrup, for this recipe I used the light syrup. The baking time varies with this recipe. Mine took exactly 70 minutes, but it could take more or less time. It's worth every second! This is gonna be a regular, at least once a month at my house! Hope you guys loved it as much as my family. Until the next one! 


I left out an egg... it's 3 eggs not 2 ;)


Ingredients:

1 cup granulated sugar
3 Tablespoons of brown sugar
1/2 teaspoon salt
1 cup of light corn syrup
1/3 cup melted salted butter
1 teaspoon vanilla extract
3 whole eggs beaten
1 cup chopped pecans
1 9" pie crust


Procedure:


  1. Preheat oven to 350 degrees F. 
  2. Mix the granulated sugar, the brown sugar, salt, light corn syrup, melted salted butter, vanilla extract and the eggs together in a bowl. 
  3. Pour the pecans in the bottom of the pie shell.
  4. Pour the syrup over the top of the pecans. 
  5. Cover the top and crust gently with aluminum foil.
  6. Bake the pie for 30 minutes. Remove the foil and continue baking for 20 minutes. It's important  not to burn the crust nor the pecans.
  7. The pie shouldn't jiggle a lot when removed from the oven. If you see it jiggling a lot it's important to put back the foil and bake it for 20 more minutes, until it sets. 
  8. Allow to cool overnight.





Add the granulated sugar.




Add the brown sugar.




Add the salt.




Add the light corn syrup.




Add the melted butter.




Add the vanilla extract.




Add the eggs.




Mix it all up.




Chop the pecans.







Add the pecans to the pie crust.




Pour the syrup over the pecans.




Put the aluminum foil gently over the pie. Bake for 30 minutos




After the first 30 minutes, remove the foil and bake for 20 more minutes.




If it shakes a lot, you need to put the foil back and bake for 20 more minutes.




Put back the foil to prevent the pie from burning.
