Coconut Popsicles




This heatwave is unbearable! That's why I've decided to make a new popsicle recipe!!! With coconut!!! Unlike the tropical fruit popsicles I made a while back, these new ones don't last as long before melting because they are so creamy. My son loves them, especially the little bits of coconut he finds as he eats them. We're now in the habit of always keeping a variety of popsicles in the fridge so we always have enough for the whole family on these scorching hot days. Hope you all enjoy them as much as my son does when he gobbles them up!

Ingredients:

1 can (13.5 onzas) of coconut milk
can (14 oz) of condensed milk
cup of coconut flakes
cup of heavy cream

Procedure:

  1. Put all the ingredients in a mixer. Mix well.
  2. Put all the mix in the popsicles mold.
  3. Freeze through the night.







Put the coconut flakes into the blender.





Add the coconut milk.





Add the heavy cream.





Add the sweetened condensed milk.





Mix well.





Continue mixing until smooth.





Pour mixture into the molds.

Nutella Mousse Brownie Trifle!




Back when I was a wife, but not yet a mother, I made a Nutella trifle. My husband went crazy for it! He pretty much inhaled it. However it used mascarpone cheese which isn't usually available where we go buy groceries so I never made it again. A few years went by and then the other day we stopped at a different grocery store. Suddenly my husband dashed across the store and tore the mascarpone cheese off the shelf. How he saw it I don't know since my husband is all but legally blind, but he carried it back like he'd just found a hidden treasure. He put it in the cart and told me, "here now you can make trifle tomorrow." All matter of fact, like it was no big deal! I took a big breath and told him I loved him so much that I'd go ahead and make it.





Ingredients:

Whipped cream

2 cups of heavy cream
2 1/2 tablespoons of white sugar

Nutella Mousse

6 oz of mascarpone cheese
1 cup of nutella
1 cup of whipped cream

Brownies

Make a batch of homemade brownies or make your favorite box mix


Procedures:


Nutella Mousse




Measure the Nutella




Add the mascarpone




Add the Nutella to the mascarpone.




Mix them well, then let it rest while you make the whipped cream.




Once the whipped cream is made, add one cup of the cream to the mascarpone mixture.




Start folding it in slowly, moving from the center to the outside of the bowl so the  the whipped cream doesn't loose that airy texture.




Keep mixing until it's smooth and even.


Whipped Cream



Pour the heavy cream into the mixing bowl.




Add the 2 1/2 Tablespoons of white sugar and start mixing.




Once done set aside.


Trifle


Time to assemble the trifle!!




Cut the brownies into small cubes.




Put some brownies in a trifle bowl or any bowl of your preference.




Pour a little Nutella mousse and add some brownies.




Add a layer of whipped cream




Add more brownies.




Add another layer of mousse, then brownies and this time you can add some chocolate syrup.




Add  the final whipped cream layer.




Top with brownie crumbs to decorate. 




And now it's time to enjoy the magnificence of the Nutella Mousse Trifle!

Two Milks Sara Lee


I like having  a lot of cookbooks and I love surfing the internet looking for new recipes. Searching through some Facebook cooking pages I found this recipe that was supposedly super easy and delicious. After a week of trying to decide whether or not to make it I decided to take advantage of my next trip to get groceries and got the ingredients to make the dessert. So I headed out with my hubby and got everything I needed.

I did my own take on the original recipe. I added a few things and took away others. The original recipe didn't have vanilla extract, so I added some. (I really like vanilla extract.) The other thing is that the recipe called for cool whip; I prefer making my own whipped cream. Lastly the recipe adds berries or other fruits. I had bananas at home, but my husband doesn't like them on desserts, so I didn't include them. However when I served myself a piece I threw some bananas on and it was delicious. This is the kind of recipe you can play with, so be creative and hace fun! Hope you all love this recipe. Until the next one!



Ingredients for the pound cake mixture:

1 Sara Lee butter Pound Cake (family size)
1 can of evaporated milk
1 can of condensed milk
1/2 teaspoon vanilla extract


Ingredients for the whipped cream:

1 cup of chilled heavy cream
1/2 cup of white sugar
1/2 teaspoon of vanilla extract


Procedure for the cake:



Cut the Sara Lee pound cake into slices.


 Put the slices into a dish of your preference.


Put the evaporated milk into a mixing bowl.


Add the condensed milk.


Mix well.


Add the vanilla extract and continue mixing.


Pour the milk mixture on top of the pound cake.


Let it soak for a minute.


Mash with a fork.


Spread it out with an spatula.


Put a lid on and let it rest. Refrigerate until you are finished preparing the whipped cream.


Procedure for the whipping cream:


Pour the heavy cream into the mixing machine or you can use a handheld whisk in a cold bowl.


Add the sugar while mixing the milk.


Add the vanilla and mix it.


Procedure to finish the dessert:


Spread the whipped cream on top of the cake.


Refrigerate for at least 3 hours before serving.
