Coconut Popsicles




This heatwave is unbearable! That's why I've decided to make a new popsicle recipe!!! With coconut!!! Unlike the tropical fruit popsicles I made a while back, these new ones don't last as long before melting because they are so creamy. My son loves them, especially the little bits of coconut he finds as he eats them. We're now in the habit of always keeping a variety of popsicles in the fridge so we always have enough for the whole family on these scorching hot days. Hope you all enjoy them as much as my son does when he gobbles them up!

Ingredients:

1 can (13.5 onzas) of coconut milk
can (14 oz) of condensed milk
cup of coconut flakes
cup of heavy cream

Procedure:

  1. Put all the ingredients in a mixer. Mix well.
  2. Put all the mix in the popsicles mold.
  3. Freeze through the night.







Put the coconut flakes into the blender.





Add the coconut milk.





Add the heavy cream.





Add the sweetened condensed milk.





Mix well.





Continue mixing until smooth.





Pour mixture into the molds.

Coconut Lime Popsicles!





An old girlfriend from high school shared this popsicles recipe on her Facebook account, so I decided to give it a try. I must admit I didn't love the taste since it has a very mild flavor, but my husband and our baby devoured these things! It's a super simple recipe to make. Since my pediatrician doesn't want our baby to consume cow's milk yet (hence no ice cream) it's a great alternative for my baby since the icy treat helps soothe his teething. He really enjoyed his popsicles a lot!

Hope you guys enjoy them too!



Ingredients:

1 can of coconut milk
2 limes
3-4 tablespoons of honey







Procedure:





Put milk in a bowl.




Zest the lemon.




Add the lemon juice.




Add the honey.




Mix everything well.




Continue mixing until smooth.




Put the mixture in a measuring cup. This makes it easy to portion as you pour.




Have your popsicles molds ready.




Pour in the mixture, then chill in the fridge for at least four hours.

Passion Fruit Coquito (Eggnog)




You are probably thinking what the hell am I thinking posting an eggnog recipe when the Holidays are over… well let me tell you, this is the first year I made this coquito and it was an instant family hit! I don’t think that for this recipe you need to wait for the holidays. This is good for anytime of year. The recipe is amazingly easy; just mix everything. Hope you guys enjoy it too!
*I won’t be able to put pictures of the recipes for a while because my camera decided to die, which makes me really sad. But as soon as it’s fixed I’ll make the recipe again and post the pictures!

Ingredients:

1 can of condensed milk
1 can of evaporated milk
1 can of coconut milk
1 can of coconut cream
1 cup of passion fruit juice (pulp juice)
White rum
Cinnamon (to taste)

Procedure:
Mix everything well. Put the mixture in individual bottles as gifts or put it in a big bottle and refrigerate. Remember to mix it well before serving.
