Coconut Lime Popsicles!





An old girlfriend from high school shared this popsicles recipe on her Facebook account, so I decided to give it a try. I must admit I didn't love the taste since it has a very mild flavor, but my husband and our baby devoured these things! It's a super simple recipe to make. Since my pediatrician doesn't want our baby to consume cow's milk yet (hence no ice cream) it's a great alternative for my baby since the icy treat helps soothe his teething. He really enjoyed his popsicles a lot!

Hope you guys enjoy them too!



Ingredients:

1 can of coconut milk
2 limes
3-4 tablespoons of honey







Procedure:





Put milk in a bowl.




Zest the lemon.




Add the lemon juice.




Add the honey.




Mix everything well.




Continue mixing until smooth.




Put the mixture in a measuring cup. This makes it easy to portion as you pour.




Have your popsicles molds ready.




Pour in the mixture, then chill in the fridge for at least four hours.

Spicy Crock Pot Pull Pork

My husband has been nagging me about making him pulled pork for a while so I decided to finally make it. I decided to take advantage of the fact that it was the holiday. I invited my family over to celebrate New Year's Eve at our house and made this awesome recipe. After waking up at 5:00 am and groggily starting the whole process I realized that I hadn't taken pictures of the process. So I will be posting the recipe, but I'll have to make it again so I can post the photographs of the process. As you can imagine my hubby was "so sad" when he found out he was gonna have to eat pulled pork again... lol. On the photo above I'd made a double recipe for my family. The leftover pork was used to make some amazing sloppy joe's the next day (with a little cheese and bbq sauce!) I promise I will be uploading the photos pretty soon!

 Update: I added pictures of the procedure. When I first made the post, it was for a family reunion, so I doubled the recipe. In the procedure photographs you'll see only one pork, except in the last one. That quantity of pulled pork is of two porks. Enjoy!


Ingredients:







Mix of spices:

3 Tablespoons of paprika
2 Tablespoons of salt
2 teaspoons of ground black pepper
1/2 teaspoon of cayenne pepper
1 teaspoon of garlic powder
1/2 teaspoon of dried thyme

Paste mixture:

1/2 cup of honey
1/4 cup of white vinegar
3 Tablespoons of olive oil

Additional ingredients:

1 onion, cut in half
3 to 3 1/2 pounds of pork shoulder


Procedure:

  1. In a mixing bowl, add the spices.
  2. Add the honey, vinegar and olive oil.
  3. Spread the onions along the bottom of the slow cooker.
  4. Place the pork on top.
  5. Pour the honey paste over the pork.
  6. Set the slow cooker on low, and let it cook for 7-8 hours.
  7. Enjoy!



Step by Step Photographs:




In a bowl, add the salt.




Add the paprika. (I used in this recipe the sweet paprika.)




Add the ground black pepper.




Add the cayenne pepper.




Add the garlic powder.




Add the dried thyme.




Mix all the spices.




Add the honey.




Add the red wine vinegar.




Add the olive oil.




Mix everything.





Put the onion along the bottom of the slow cooker.




Place the pork on top.




Pour the honey paste over the pork. 

Set the slow cooker on low, and let it cook for 7-8 hours.




After 8 hours is done!

Ginger Tea


Hi! I know, I know it’s been a while since I last posted a recipe… let’s just say life happened and sometimes there’s nothing you can do about it. But this next year I’m back on track. I hope this new year 2013 brings a lot of joy and love to everyone! This year I’m gonna start with a tea recipe. I found it in the Food Network magazine volume 6 number one. This will be like the recipe of the magazine, but I will be giving it my own spin.
 You must be thinking, “why would she do something like that!?”  Well the answer to that is that this year I want to try different things, get out of my comfort zone, try new things and start making what makes me really happy. I wanna dedicate this post to my little brother whom I love with all my heart! Thanks for inspiring me to be better and awesome! ;)
The result: the ginger is a little bit spicy for me, but it tastes good.  I prefer this tea iced rather than hot. So here’s something new and different; and even though it’s not completely my cup of tea I enjoyed it and am thinking about making it different to fit me and my needs.  Stay tuned… tomorrow I will be giving in the next post my spin of this recipe!

Ingredients:
8 cups of water
1 cup of thinly sliced unpeeled ginger
¼ cup of honey

Procedure:


Cut the ginger.

 

Bring the water and ginger to a simmer for 25 minutes or until reduced to 5 cups.



Sweeten with the honey.
Dust with cinnamon.

Honey Sesame Chicken


I was going through the blog and noticed that I have more desserts than food, oh my… well I’m not going to deny how fond I am of making sweets, but I’m fond of making delicious food too. So I decided to try posting more food recipes than desserts... for a week… I’ m going to try… I can’t promise anything... (let’s see how long that’s going to last.) I hope it lasts for at least 3 or 4 posts.
So let’s start with this one!  Two days ago I gave you my first slow cocker recipe and it was a hit! After the countless hours of cooking and feeling like I wasn’t really doing anything I’m starting little by little to grow fond of it. May I please repeat that, little by little! Ha ha ha. I’m definitely putting on my patience hat today. But don’t you even dare to think I’m going to spend those eight to nine hours again just waiting and waiting, oh no mister!
I spent some time researching for some recipes and voila! I found a recipe that won’t make me feel like I’m losing 8 to 9 hours; this one is only 3 to 4 hours on low or 1 ½ to 2 ½ hours on high! I’m thinking the 1 ½ to 2 ½ sounds better. Well, I may sound crazy but this kind of stuff excites me. It’s definitely not the same as waiting for 9 hours as two and a half, don’t you think? And yes I know there are people that just love the slow cooker because you just put everything in and forget about it; and that’s not a bad thing. I’m sure one day when I have kids you’ll be seeing new posts glorifying the slow cooker and thanking whoever invented it. But guys, for me, that’s a long way’s off. This love story is gonna be one recipe at a time.  It’s impossible to for me to stop being my usual controlling self from one day to another…
Oh well, enough with all this chitchat; let’s get down to business. Today’s star is the honey sesame chicken recipe! The house smells just awesome and the thighs taste just like it smells. I’m making rice to serve with the chicken.  My husband is even not letting me make the sauce he just wants to eat it all! Finishing this recipe I must admit I’m loving the slow cooker a little bit more. I hope you guys enjoy it as much as us!



Ingredients:

2.5 pound of boneless, skinless chicken thighs
Salt and Pepper (to taste)
1 cup of honey
½ cup of soy sauce
4 tablespoons diced onion
4 tablespoons ketchup
2 tablespoons of canola oil
2 cloves garlic, minced
½ teaspoons of red pepper flakes (optional)
4 teaspoons of cornstarch dissolved in 6 tablespoons of water.
Sesame seeds

Procedure:



Pat dry the chicken.


Season both sides of the chicken with salt and pepper (to taste)

Put into the slow cooker.


Cut the onion.

In a small bowl pour the honey.

Add the soy sauce.

Add the onion.

Add the ketchup.

Add the oil.

Add the garlic.

Add the pepper flakes (optional)

Mix all the ingredients well.

Pour the mixture over the chicken.

Cook on low for three to four hours or on high for 1 ½  to 2 ½ hours.

Remove the chicken from the slow cooker, leaving the sauce.

 
Dissolve the 4 teaspoons of cornstarch in the 6 tablespoons of water.


Pour the mixture of cornstarch into the slow cooker.
Stir it until combined with the sauce. Put the lid back on.
Cook the sauce on high for ten minutes or until slightly thickened.

Meanwhile, cut the chicken into bite size pieces.

When the sauce is cooked return the chicken to the pot.
Stir it a bit so the chicken can be cover with the sauce.

Sprinkle with sesame seeds and serve it over white rice.
